Find out why Volo is among the Top 10 Most Notable Wine Lists (Open Table) and Best Wine Bars In Chicago (Thrillist): Join us Thursday, March 21st, 2019 in what has become a highly anticipated annual event, when we will be pouring stellar boutique wines from Chateau Maris with a sublime six-course menu created by Chef/Partner Stephen Dunne. The event will take place in Volo’s cozy urban/chic dining room and bar located in charming Roscoe Village.
Located in the village of La Liviniere, the first Cru Classe of the Minervois, Chateau Maris built the world’s first organic hemp-straw winery. The building captures and sequesters carbon dioxide in the air, resulting in a carbon negative facility. In addition to becoming a certified B-Corp, Chateau Maris has long embraced the practices of biodynamic farming, receiving Demeter, Eco Cert, and Biodyvin certifications throughout the years.

About Volo Chef/Partner Stephen Dunne: Before arriving in Chicago, Stephen worked in celebrated restaurants in New Orleans, Las Vegas, & San Francisco in addition to training at the 3-Star Michelin Restaurant Lucas Carton in Paris. Once in Chicago, he took over Chef de Cuisine positions at Spago Chicago, and then the recently opened MK. Stephen and Volo Managing Partner Jon Young joined forces in 2005 to open Volo in Chicago’s Roscoe Village neighborhood. Once again, this year’s menu will reflect Stephen’s love and passion for French food & wine.
