The Event
Volo is excited to be a part of just 50 restaurants nationwide (and only 2 in Chicago), featuring discounted glass pours from Large Format Bottles of a stellar featured premium wine from Tuscany for one night.
Guests will enjoy discounted tableside pours from 3-liter bottles of the 2022 Castello di Bossi Corbaia (70% Sangiovese, 25% Cabernet Sauvignon, 5% Cabernet Franc) as they enjoy Volo’s latest seasonal menus and a festive environment.

The Wine
Corbaia was one of the first dozen true Super Tuscan wines on the market, distinguishing itself from the thousands of wines using the moniker today.
Born from a vineyard of Cabernet Sauvignon planted by Giacomo Tachis, often referred to as the “The Father of Super Tuscans”, in the remote corner of Castelnuovo Berardenga in Chianti Classico where no one would notice it, the cuttings came from the most prestigious properties in Bordeaux.
For decades, the grapes from the Corbaia vineyard were sold to other wineries to be blended into some of Tuscany’s most famous wines, but after Castello di Bossi was founded in 1983 by the Bacci family, the decision to create a wine from this vineyard was made.
The blend has remained consistent since then, placing Sangiovese in the lead role to honor Tuscany’s most noble native varietal. The critics all agree that Corbaia is approachable in its youth but has the stuffing to age gracefully for decades. 70% Sangiovese, 25% Cabernet Sauvignon, 5% Cabernet Franc. 24 months in mostly new barriques.
